Delicious Coconut Cream Pie Recipe


For The Pie Filling:

  • 1½ cup Sugar
  • ½ teaspoon Salt
  • 1 tablespoon Flour
  • 4 tablespoons Cornstarch
  • 3 cups Milk
  • 3 Egg Yolks, slightly beaten
  • 1 tablespoon Butter
  • 2 teaspoons Vanilla
  • ½ cup Coconut


For The Pie Filling:

  1. Combine sugar, salt, flour, and cornstarch in saucepan.
  2. Stir in milk and heat slowly until just slightly thickened.
  3. Beat together the egg yolks, butter, and vanilla and stir into milk mixture.
  4. Continue to cook for about 3 minutes.
  5. Add coconut and pour into pie crust.

For The Meringue:

  1. Add cream of tartar and sugars to the beaten egg whites and continue beating until glossy.
  2. Spoon on top of filling and bake for 10 to 12 minutes in a preheated 400 F oven, watching closely so it does not burn.
