Skillet Corn

Skillet Corn


  • 6 ears corn, grated, or 1 can cream style corn
  • 3 eggs
  • 1 scant cup flour
  • 1 tsp. paprika
  • 1 TB sugar
  • 2 tsp. baking powder
  • 1 tsp. salt


  1. Beat egg yolks.
  2. Add corn, four, and seasonings.
  3. Fold in stiffly beaten egg whites, then baking powder.
  4. Drop in deep hot grease in a heavy skillet, and fry until golden brown.
  5. Drain on paper towels
